Grandma O'Connor's Irish Soda Bread
- 3¼ cups flour ( I often use half white whole wheat)
- ½ teaspoon salt
- ⅓ cup sugar
- 2 teaspoons baking soda
- 3 T. butter, melted
- 1 cup raisins or currants (I like to use golden raisins, Grandma used currants)
- 1½ cups buttermilk
- 2 whole eggs ,beaten
- Preheat oven to 350 F.
- Mix all ingredients together by hand and mound into center of greased and floured round cake pan.
- Score top of loaf with an X .
- Bake for one hour.
- Serve with Kerrygold Irish butter.
